Jose y Jose Taco Vinaigrette Tacos

Ingredients

  • 500g - 1lb chicken tenderloins

  • 1 tbsp olive oil

  • Salt & cracked black pepper, to taste

  • ½ cup of the Jose y Jose Original Taco Vinagriette

  • 2 tbsp melted butter

  • 1 tbsp honey (optional, for a touch of sweet)

  • 8 small soft flour or corn tortillas

  • 1/2 bag (8oz) coleslaw mix (shredded cabbage and carrots)

  • 1/4 cup mayonnaise or sour cream

  • 1 tbsp fresh lime juice

  • 1/4 cup fresh cilantro chopped

Method

  1. Marinate the chicken tenderloins: place the chicken in a resealable bag or bowl, pour in the Jose y Jose Original Taco Vinaigrette and marinate for at least 30 minutes (or up to 4 hours in the fridge)

  2. Make the Slaw: In a medium bowl, combine the coleslaw mix, mayonnaise or sour cream, and lime juice. Stir well to coat. Add the chopped cilantro and mix again. Set aside.

  3. Cook the Chicken: Heat a skillet or grill pan over medium-high heat. Cook the marinated chicken for 5-7 minutes per side, or until cooked through.

  4. Warm the Tortillas: While the chicken cooks, warm your tortillas in a dry pan or on the grill for 30 seconds per side.

  5. Assemble the Tacos: Fill each warm tortilla with the cooked chicken, top with a generous spoonful of the fresh slaw, and add any of your favorite toppings.

    Serve immediately and get that fiesta started!
