Jose y Jose Chipotle Vinaigrette Roasted Taco Vegetables

Ingredients

  • 1 bell pepper

  • 1 tbsp olive oil

  • 1 red onion

  • 1 zucchini

  • 1/4 cup of the Jose y Jose Chipotle Vinagriette

  • Salt & cracked black pepper, to taste

Method

  1. Chop all vegetables

  2. Toll chopped vegetables with olivie oil on a baking sheet.

  3. Roast at 400°F (200°C) for 20 minutes
